Beef Kabobs

  • 1 1/2 lb. Loin Tenderloin Tip, Chuck Eye Steak, or Round Tip
  • Zuchini, sliced
  • 3 cups of your favorite marinade
  • Eggplant, cubed
  • 3 or 4 of the following:
    • Pineapple chunks
    • Mushroom caps
    • Apple chunks
    • Lg. green bell pepper, seeded and cut in squares
    • All Beef frankfurters
    • Cherry Tomatoes
    • Water chestnuts
    • Tomato wedges
    • Stuffed green olives
    • Onion wedges, parboiled
    • Celery chunks, parboiled

Cut meat in 1 1/2 inch cubes. Less tender cuts should be marinated in refrigerator in covered glass dish about 2 hrs. Remove meat from marinade, reserving marinade for basting. Alternated meat with three or four other ingredients on skewer, being careful not to crowd food. Place on grill 4 inches from hot coals. Turn frequently and baste with reserved marinade or melted butter. Grill approximately 15 minutes, until meat is browned and vegetables or fruit are tender.
